What's the best way to store my coffee?

We roast multiple times a week to deliver the freshest coffee to the people of Orange NSW and the Central West.  Its impossible to create a great coffee with stale, supermarket bought coffee.  This where freezing coffee will drastically improve your home coffee ritual.  Say you buy 1kg, but only use 200g a week.  At Kite Coffee, we place the date of roast on the friont of the bag.  After 7 days of resting and degassing, your coffee is perfect to use.  Now is the time to freeze the coffee in 200g portions (ziplock bags are great).  This will lock in the age of the coffee at the time of freezing. Use each portion as you need it

What is the best coffee roast for the water in Orange?

Orange has particularly hard water which requires good filtration if using coffee machinery. In general, Medium roasts typically perform best with Orange’s water profile, as they balance the natural acidity of the beans with the local mineral content. Dark roasts work well too.  We develop our Magnitude and Seismic blends specifically to maintain a smooth, chocolatey finish when brewed with local tap or filtered water.

How long should I wait to brew coffee after it’s been roasted?

For the best flavour, you should wait 5 to 7 days after the roast date before brewing. This "resting period" allows CO2 to escape (degassing), preventing your coffee from tasting sour or overly acidic, which is especially important for espresso.  These volatile components can also represent as bitterness, so its wise to wait a little.  You can still use your coffee straight away (we do sometimes too) but you may have slightly elevated acidic notes and see more gassy, volatile looking espresso. in the first few days after roasting.
